Cafe du Tukon

Cafe du Tukon

Blessed in isolation, Batanes tells a story of a people who have learned to adapt to and thrive despite their often harsh and unpredictable environment. From our endemic flora and fauna (50 varieties of root crops the only kind that thrives in stormy Ivatan weather) to our culinary techniques - fish dried and smoked above our stoves for preservation as well as organic pork cooked and stored for months in its own lard to ensure continuous supply - our cuisine is proof of the Ivatan's ability to live in harmony with its environment.

Sculpted by wind, rain and the rolling tides, the untouched beauty of our landscape is a testament to our respect for the laws of nature.

The sights and tastes of Batanes are more than unique - they reflect a cultural heritage that places value on our collective effort to understand and adapt to our ever-changing environment. Most of all, they are a testament to our commitment to the protection of our land and waters, key to our collective survival.

Café du Tukon supports Ivatan farmers and cooperatives by making sure that when you place your order, you get the freshest catch and produce that our neighbor fisher folk and farms have in season. Please enjoy them and help us to preserve our ways.
